Recipe: Gluten-Free CBD Cookie

This new chewy peanut butter cookie recipe has much more protein with the addition of an egg and is also gluten-free.

Isn’t the worst when you are trying to be healthy but all you can think of is destroying a whole tray of cookies? The oppressive thoughts claw their way into your brain like some kind of demonic entity. Then your brain gets to thinking that maybe if you eat a large salad you can have just one cookie. But you can’t just bake one cookie, can you? No, you have to bake a whole tray because other people in the house want cookies too.

As your cookies cool, one breaks so you have to eat it because it isn’t perfect. Then one broken cookie in your tummy turns into, “I will have one more now that they are all cooled” cookie in your tummy. Before you know it, you have polished off four delicious warm gooey oven baked cookies and have consumed more than half of your daily calorie intake goal. Talk about empty calories.

For me, this demonic urge for cookies not only invaded my thoughts during the day, but also creeped into the night, when the urge to make traditional peanut butter cookies was so strong that it invaded my dreams. Upon waking and not being able to shake such a desire, I obliged to the sugar demon without any hesitation. Into the kitchen I went, rummaging through the cupboards and refrigerator to see what ingredients I could play with. As my fingers slid across a jar of vanilla protein powder I found myself creating a spin-off of a protein no-bake peanut butter cookie recipe I made in 2010. I decided to turn my craving into a nutritious, yet sweet tooth pleasing, chewy peanut butter cookie instead.

As a cannamom that is on a successful journey to getting her post-baby body back, this cookie is a healthy alternative to kill a sweet hankering without all the remorse. Pair with a strain of kief such as Tora Bora that has spicy herbal flavor profiles to play off the nutty flavor of the peanut butter. Enjoy with a tall cold glass of obligatory milk or even a glass of guilt-free coconut milk.

Mise en place:

1 cup natural creamy peanut butter
1/2 cup sugar substitute (If you want sugar, use turbinado sugar)
1 egg
1 scoop vanilla rice protein powder
1 gram high CBD low THC kief

Directions:

1 . Turn the oven up to 350 degrees F. In a small bowl mix all of the ingredients with a wooden spoon.

2. Once the mixture comes together, divide the dough into 12 servings with a scale. Let the dough balls rest in the refrigerator for 15 minutes.

3. Remove the dough balls from the fridge. Pat each serving into the shape of a cookie then place the cookie dough onto a cookie tray. Use a fork to flatten the dough in a crisscross pattern.

4. Bake for 14 minutes then pull from the oven. Cool for 8-10 minutes or until the cookies have completely set. If you try to remove the cookies while hot they will fall apart.

5. Enjoy with a big glass of milk or coconut milk!

Suggested Strains High in CBD: I would recommend the following strains but feel free to use any high CBD strains you can get your hands on: R4, Harlequin, Tora Bora and Cannatonic.
